Completer is an old grape from Graubünden that was first mentioned in 1321 in a document from the chapter of the Cathedral of Croire. Its name comes from the Latin Completorium, designating the evening religious service in the tradition of the Benedictine monks where it was allowed to drink a glass of wine in silence. A late variety benefiting from foehn, the Completer produces powerful and rich wines, whose natural acidity allows great aging potential. It had almost disappeared in the 1960s before being saved by passionate winegrowers who have enabled it to survive today, mainly in Graubünden, but also in Zurich and more recently in Valais.
